    Being a mom is challenging, yet very rewarding.

    I started this blog for many reasons, but the main reason being to spread the love, the words, and advice. I have a large family, 5 kids to be exact; with them ranging from 10 - 17 years old. Whew, is all i'm saying. Things can get hectic in a family as large as ours. From soccer practice, to meetings, commuting the children back and forth to school and practices, ( we are considered Taxis now) and just life in general- we don't let things bring us down!

     

    Having a positive attitude,being optimistic - and raising my kids to the best of my ability is my only focus..Having a purpose..

    Without purpose, what do you have?

     

    We all want our kids to be the next president, a Doctor or Nurse, or maybe a Lawyer (whatever it may be), they don't just wake up with the skills of a highly recognized Surgeon; they have to be "molded" in a sort of way. As if a Potter was making one of his most gorgeous pieces of pottery- we have to shape and mold them just the same- with care and lots of attention. Yeah, the Potter would make some mistakes- He was human after all..., but once he got the potter wheel going again, he'd smooth the clay, then add a little bit more water...and right before his eyes- everything he envisioned was starting to take "shape"- and it only got better from there.

    Just because we're Moms doesn't meant we can't have style too.. As a matter of fact, it is a must!! Your children will thank you. No more rollers or stained robes please while taking little Junior to the bus stop.. Just kidding...

     

    No really, I'm not kidding. Some of us feel that our children are a reflection of us, and you better believe that children think the same. I agree to a certain extent, but I vowed to never become one of those ladies who has 1 thousand cats and 1 thousand "house-coats" or robes.. whatever you call it.. Anywhoo.. dress with style and flair, and still pick up those babies from soccer practice. Never missing a beat..

  • Family and KId approved recipes

    Making dinner for a large family can be a bit frustrating. Some kids are like mine, picky picky picky....

     

    I have compiled a few of my family's favorite recipes. I love these recipes because they are quick, simple, and very tasty!!

    Not to brag, but these recipes were created by me- a Mom,and a pretty decent cook :)

    Try them out tonight on the kids, and they'll thank you for skipping the chopped onions and liver dish...

     

     

    Sloppy Joe Lasagna

    ​Prep Time: 25 mins

    Cook Time: 30-45 mins

    • 1-2 boxes of NO BOIL lasagna noodles
    • 3 cans of Sloppy Joe Sauce
    • 1 Chopped onion (small pieces)
    • 1 Chopped bell pepper
    • 1 cup minced garlic- dry or wet
    • 1 cup sugar- you can use lite sugar, or Splenda if you don't use pure sugar
    • 1-2 lbs groundbeef
    • 1 cup parsley flakes
    • 1 Container of cottage cheese
    • 1 pack of shredded cheese
    • 1 EGG
    • SALT AND PEPPER FOR ADDITIONAL SEASONING.
     
    THINGS YOU WILL NEED:
     
    DEEP DISH SKILLET OR LARGE SKILLET FOR COOKING GROUND BEEF.
     
    DIRECTIONS:
    1. COOK AND BROWN GROUND BEEF IN THE SKILLET. 
    2. DRAIN GREASE FAT FROM GROUND BEEF, AND SET ON STOVE ON LOWEST SETTING.
    3. QUICKLY ADD PARSLEY, CHOPPED ONION, CHOPPED BELL PEPPER, MINCED GARLIC, and SUGAR to the cooked and drained ground beef.
    4. ADD 3 CANS OF SLOPPY JOE SAUCE, AND SIMMER ON LOW FOR APPROX. 5-10 MINUTES. STE ASIDE AFTER SIMMERING.
    5. MIX COTTAGE CHEESE AND ONE RAW EGG IN A BOWL.
    6. START LAYING YOUR NO BOIL LASAGNA NOODLES IN A CASSEROLE DISH OR METAL PAN. (BIG ENOUGH FOR LAYERING)
    7. LAYER NOODLE, THEN MEAT SAUCE , THEN COTTAGE CHEESE MIXTURE, THEN SHREDDED CHEESE. DO THIS UNTIL PAN IS FULLY LAYERED. TOP LAYER SHOULD HAVE A THIN LAYER OF SHREDDED CHEESE ON TOP.
    8. PUT IN COLD OR PRE-SET OVEN ON 350 DEGREES FOR 35-40 MINUTES. 
    9. WATCH AND TEND TO YOUR DISH BECAUSE THE TOP CHEESE CAN BURN QUICKLY.
    10. LET FOOD COOL, AND CHOMP DOWN!!
     
     
     

     

    Easy Chicken Rotel and Nachos

     

    Prep Time: 25 mins

    Cook Time: 1 hour

    • I pack of boneless chicken breast. ( I use about 4 chicken breasts)
    • 2 cans of Rotel (whatever flavor you like- i try to avoid the hot kind)
    • salt and pepper for taste
    • Angel Hair Pasta
    • 1 whole box of Velvetta Cheese
    • Nacho Cheese Doritos or family's favorite chips
    THINGS YOU WILL NEED:
     
    CROCK POT OR LARGE POT
     

    DIRECTIONS:

     

    1. COOK CHICKEN BREAST AND SHRED WITH A KNIFE.
    2. ADD COOKED CHICKEN BREAST TO CROCK POT.
    3. CUT UP Velveeta CHEESE INTO SMALL SQUARES ABOUT THE SIZE OF A QUARTER.
    4. ADD CANNED ROTEL TO THE CROCK POT AS WELL.
    5. BOIL ANGEL HAIR PASTA TO DESIRED TEXTURE, DRAIN, AND MIX INTO CROCK POT WITH OTHER INGREDIENTS.
    I like to boil pasta last to give cheese enough time to melt in the crock pot. it's definitely a personal choice though.
     

      6. Once all ingredients are in the crock pot, let it simmer and cook on the lowest setting for about 30 minutes - 1 hour. the dish is already done, just let the cheese melt. You can then change your settings to warm until dinner.

     

    SERVE WITH DORITOS OR CHIPS

    ADD INS: Sour Cream on top with chives.

     

     
     
     

    Easy Pizzy Pizza

    Prep Time: 15 mins

    Cook Time :20-25 mins

     

    1. Pre baked crust (you may have to ask a store associate to find this)
    2. 1 large can of tomato sauce
    3. pre-cooked package of pepperoni
    4. shredded cheese (taco cheese)
    5. ANY OTHER MEAT TOPPING OR VEGETABLES YOU LIKE
    DIRECTIONS:
    1. PRE-HEAT OVEN TO 350
    2. SPREAD TOMATO SAUCE ON PRE-BAKED PIZZA CRUST WITH A SPATULA OR BUTTER KNIFE
    3. TOP WITH  PRE COOKED PEPPERONI, VEGETABLES (OPTIONAL) 
    4. TOP WITH SHREDDED CHEESE.
    5. COOK ON PIZZA MAKER, OR BAKE IN OVEN AT 350 DEGREES FOR 15-20 MINUTES.
    6. LET PIZZA COOL FOR APPROX 1 MIN, CUT WITH PIZZA CUTTER FOR EVEN SLICES.
    7. LOOK AT YOUR KIDS SMILING
     
  • creative and fun things to do with the family

    Memphis is my birthplace and I have seen a lot of things come and go, but one thing remains the same... free fun is out here!!!

    This open air concert venue is great. My mom introduced me to this place a few years ago, and I patiently wait on the artist line-up roster to check out local talent. A great place for the kids. Grab a few blankets, and some snacks and don't forget the bottled water. Listen to great acts live on stage, and dance in the grass- if you want to :)

    Fun for the whole family. Ages 0-99 will enjoy this educational, yet enlightening trip. The family and I went here, and stayed for about 2 hours. You can also go to their website and get free family passes, or go on Tuesdays when admission is absolutely free with your Tn ID or License.

    National Civil Rights Museum

    Learn about black history. This museum never ceases to amaze me. It is a small museum, yet they continue to renovate and add new exhibits. The kids learned about some of Martin Luther King's history of protesting, and they were in shock at the history presented. If you have young children, you may need to talk to them ( prep-talk) before visiting. All in all a good trip- and it's also FREE on Mondays with your TN identification.

    Fun @ HOME

    • Create Movie Night. Let your kids pick from 2 movies. Gather in the family area, pop popcorn, bake pizza, and drink soda. You can take it up a level and buy popcorn buckets for a more real effect. I bought popcorn boxes from (www.dollartree.com/ ) Dollar Tree for $1 (they are plastic, so they can be reused)

     

    • Plan a cooking class.  Ask your kids to pick a dish from a list you made of dinners to prepare. Then let each child participate in cooking, baking,stirring, folding, or whatever the recipe calls for. Usually I pick fun recipes, and simple ones too. My kids loved making the pizza from scratch, and making nachos with every topping in the world on it..lol

     

    The activities at home are the ones we enjoy best !!
